Casas del Bosque Sauvignon Blanc 2010

100% Sauvignon Blanc from the Casablanca Valley. All estate grown and selected, the vineyards provide the best combination of aspect, soil and clones. Upon arrival at the winery's reception area, the bunches were destemmed and the grapes carefully selected one by one and deposited into the press to gently extract the must. Alcoholic fermentation took place in stainless steel tanks at controlled temperatures(14°C -16°C ) for approximately 20 days with yeasts that were specifically selected for this variety. A lovely wine, as an aperitif or try with goats cheese!
