Named after the Umbrian medival hill city, this wine is made either dry, medium dry or sweet. Most of today's production is dry. The predominant grape variety is Trebbiano, with additions of either Verdello, Grechetto, Drupeggio or Malvasia. This is a dry version, and excellent aperitif
